Taste the Balkans: Authentic Stuffed Pljeskavica Recipe

Amidst the diverse Balkan cuisine lies a dish that epitomizes the rich flavor diversity and cultural richness of the region: Stuffed Pljeskavica. This iconic dish, originating from Serbia, Bosnia, and Herzegovina, represents a culinary tradition deeply rooted in the social fabric of the Balkans. Just like Ćevapi, another Balkan staple, Pljeskavica holds a revered place among the traditional grilled dishes of the region.

A Fusion of Tradition and Flavor

Stuffed Pljeskavica, often simply referred to as "punjena or gurmanska Pljeskavica," is a grilled dish that combines elements of both a burger and a meatloaf, yet it stands uniquely on its own. At its core, Pljeskavica consists of a mixture of ground meats, typically beef and pork, seasoned with a variety of spices that reflect the diverse cultural influences of the region. What sets Stuffed Pljeskavica apart is its innovative twist: a flavorful filling enclosed within the juicy meat patty.

Stuffed Pljeskavica Recipe

Start by mixing the minced meat with finely chopped onion, egg, salt, Vegeta, white pepper, breadcrumbs, mustard, garlic, and chopped chili pepper. Shape flat patties from this mixture.

For the filling: Place bacon cubes, Kajmak or feta cheese, pickled cucumber, capers, and grated mozzarella or pecorino on half of the patties. Then cover them with the remaining patties and press the edges well to seal the filling.

Grill the Pljeskavica traditionally on a charcoal grill until golden brown and cooked through on both sides.

Tips for Preparation and the Dish

  1. Make sure not to shape the Pljeskavica too thinly to prevent them from falling apart while grilling.
  2. Experiment with different fillings to suit your personal taste. Traditionally, Kajmak and feta cheese are popular, but you can also use other types of cheese or even vegetables.
  3. Serve the Pljeskavica with traditional accompaniments such as Ajvar, onions, tomatoes, and bread.
  4. A touch of smoky flavor from the charcoal grill gives the Pljeskavica a special taste and makes it irresistibly delicious.

With this Stuffed Pljeskavica recipe, you can experience the authentic flavor explosion of the Balkans right on your grill.
