Ingredients:

  • 250 grams long grain rice
  • 500 ml water
  • 1 tomato
  • 1 bell pepper
  • 1 onion
  • 3 cloves of garlic
  • 100 g peas
  • 100 g Ajvar
  • 1 tbsp Vegeta (seasoning mix)
  • 1 tbsp paprika powder
  • 3 tbsp clarified butter
  • 4 tbsp olive oil
  • 3 tbsp tomato paste
  • Fresh parsley
  • Salt & pepper to taste

Preparing Djuvec rice:

  1. Cut the vegetables (tomato, bell pepper, onion, garlic) into small pieces.
  2. Heat the clarified butter in a large pan. Add the chopped vegetables and sauté until lightly browned.
  3. Add the unwashed rice to the sautéed vegetables and mix with olive oil, tomato paste, Ajvar, and paprika powder. Sauté briefly until the rice is lightly browned.
  4. Add the water and let the Djuvec rice simmer over medium heat, stirring occasionally, for about 10 minutes. Add more water if the rice becomes too dry.
  5. Add the peas and continue to cook for another 10 minutes, until the rice has absorbed most of the liquid and is cooked through.
  6. Sprinkle the Djuvec rice with fresh parsley and serve hot.

Tips:

Use fresh vegetables for a more intense flavor and better texture of the Djuvec rice.

If you prefer the consistency of the rice, you can soak it for about 30 minutes before cooking.

Experiment with different spices to customize the flavor of the Djuvec rice to your liking. You can also add cumin or cayenne pepper, for example.

If you don't have Ajvar on hand, you can replace it with additional tomatoes or paprika paste.

Serve the Djuvec rice as a vegetarian main dish or as a side dish to dishes like Cevapi or other meat dishes for an authentic Balkan dining experience.
